We are currently seeking a full-time permanent Chef De Cuisine, for our authentic Italian restaurant La Terrazza, featuring locally sourced and inspired cuisine. Our signature in-house restaurant features a carefully curated wine list, homemade pasta and exquisite desserts.
This position is required to work day shifts, evening shifts, weekends, and holidays. The salary for this position is based on experience.
The Chef De Cuisine is responsible and accountable for planning, co-ordinating and providing leadership to the La Terrazza Kitchen Team.
Duties Include (but are not limited to):
- Assist in creating a positive work environment to ensure all kitchen staff can meet or exceed all guests needs and expectations.
- Assist the Executive Chef and Executive Sous-Chef in maximizing profit and minimize expenses by managing staff and being aware of food and labour cost budgets.
- Ensuring elegant and professional presentation and taste of food according to hotel standards.
- Assist in inventory at the end of each month as required.
- Ensuring recipes and standards are up to date for all La Terrazza menu items.
- Maintaining the highest in hygiene and food safe standards for the food service operation as per Alberta health services standards.
- Maintaining a product that is current with trends and consumer demand.
- Maintain product consistency and quality with the hotel standards.
- To be familiar with, and train staff on emergency, safety, and security procedures.
- Providing the management support and leadership necessary for the overall implementation and execution of Banff Park Lodge’s safety policy within their areas of responsibility.
Ideal candidate:
- A Red Seal Journeyman Cook's Certificate or equivalent is a must.
- Minimum of 5 years a la carte experience in a supervising position preferably in a hotel environment.
- Excellent communication and interpersonal skills.
- Must be able to lift 50 pounds on occasion and up to 30 pounds regularly.
- Schedule flexibility and over time as required
